Tropical Oatmeal Cookie Recipe


Winter is great and all but part of me misses summer, the sand on the beach, warm weather, etc.
So to break the ice(so to speak) Jared and I combined a few ingredients and came up with a great recipe for cookies that bring summer back if only for a minute or two. . .

Tropical Oatmeal Cookies:
We follow the recipe for regular oatmeal raisin cookies on the lid of the Quaker Oats package here is that recipe first:

Ingredients:
1/2 pound (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats uncooked
1 cup raisins
We did not have raisins but it might have been even better if we did.

Then we added in step 4:
1/2-1 cup coconut
1 cup chocolate chips

Other optional ingredients:
Dried pineapple
Macadamia Nuts

Steps:
1. Heat oven to 350
2. Beat together margarine and sugars until creamy
3. Add eggs and vanilla; beat well
4. Add combined flour, baking soda, cinnamon and salt, mix well.
5. Stir in oats and raisins; mix well
6. Drop by rounded tablespoonfuls onto ungreased cookie sheet
7. Bake 10-12 minutes or until golden brown.
8. Cool 1 minute on cookie sheet, remove to wire rack
Makes about 4 dozen cookies.
9. Enjoy
